Zucchini with Pork in Roasted Salsa Recipe

Ingredients
- 1 tablespoon Mazola® Corn Oil
- 4 pounds pork
- 1 medium sized onion
- 3-4 crushed Roma tomatoes
- 3 garlic cloves
- 5 zucchini
- Bite-sized pieces of roasted corn
- Panela cheese
- 1 bunch of cilantro
For the salsa:,
- Roma tomatoes
- ¼ onion
- 3 garlic cloves
- 4-5 serranos, or fewer, if you don’t want it spicy
Instructions
- Step 1) Add oil to a pan and add your chopped pork in batches, seasoning with salt and pepper.
- Step 2) Once all pork is browned on both sides add back to pan and add tomatoes, onion, salsa (see note below), and a splash of water.
- Step 3) Cover and cook on medium to low heat until meat is tender.
- Step 4) Once meat is tender add the zucchini and cook until tender.
- Step 5) Lastly, remove from heat and add roasted corn on the cob, diced Panela cheese and chopped cilantro.
- For the Salsa:
- Roast all ingredients until lightly charred and tomatoes are very soft. Blend with salt and a splash of water until smooth.
