Day of the Dead Pumpkin Bread

Ingredients

Dry Ingredients
  • ½ teaspoon of nutmeg
  • ½ teaspoon of cinnamon
  • 1½ cups of brown sugar
  • 1 teaspoon of salt
  • 2 cups of flour
  • Pumpkin seeds (for topping or mixing in)
Wet Ingredients
  • ⅔ cup of Mazola® Corn Oil
  • 3.4 ounces of low-fat vanilla pudding
  • 1 teaspoon of vanilla
  • 2 cups of pumpkin puree
  • 4 eggs

Instructions

  1. Preheat the oven to 350°F. Lightly grease a loaf pan with Mazola® Corn Oil.
  2. In a large bowl, whisk together all of the dry ingredients until evenly combined.
  3. In a separate bowl, whisk together all of the wet ingredients until smooth.
  4. Gradually fold the wet mixture into the dry mixture, stirring until just combined. Do not overmix.
  5. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle pumpkin seeds over the batter, if desired.
  6. Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
  7. Remove from the oven and allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. Slice, serve, and enjoy!
