Day of the Dead Pumpkin Bread

Ingredients
Dry Ingredients
- ½ teaspoon of nutmeg
- ½ teaspoon of cinnamon
- 1½ cups of brown sugar
- 1 teaspoon of salt
- 2 cups of flour
- Pumpkin seeds (for topping or mixing in)
Wet Ingredients
- ⅔ cup of Mazola® Corn Oil
- 3.4 ounces of low-fat vanilla pudding
- 1 teaspoon of vanilla
- 2 cups of pumpkin puree
- 4 eggs
Instructions
- Preheat the oven to 350°F. Lightly grease a loaf pan with Mazola® Corn Oil.
- In a large bowl, whisk together all of the dry ingredients until evenly combined.
- In a separate bowl, whisk together all of the wet ingredients until smooth.
- Gradually fold the wet mixture into the dry mixture, stirring until just combined. Do not overmix.
- Pour the batter into the prepared loaf pan and smooth the top. Sprinkle pumpkin seeds over the batter, if desired.
- Bake for about 45 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the loaf to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
- Slice, serve, and enjoy!
