Ingredients
- 4 chicken legs
- 2 tablespoons chicken or poultry seasoning
- 1/2 tablespoon Mazola® Corn Oil
- 1 cup uncooked rice
- 1 onion, sliced
- 2 garlic cloves, chopped
- 2½ cups water
- 8 ounces tomato sauce
- 1 tablespoon chicken bouillon
- 1/4 cup corn
- 1/4 cup chopped carrots
- 1/4 cup peas
Instructions
- Season chicken legs with poultry seasoning.
- Add Mazola® Corn Oil to hot pan.
- Add chicken and sear on both sides until golden brown, approximately 3 minutes per side.
- Remove chicken from pan and add rice to brown along with onion and garlic.
- Cook until rice is slightly browned, and onion is soft, approximately 4 minutes.
- Once toasted add water, tomato sauce and chicken bouillon.
- Add chicken back into pan along with veggies and let it simmer on medium heat for 15 minutes, until rice and vegetables are fully cooked.
- Once ready, fluff rice and serve.
