Ingredients
- 2 tablespoons Mazola® Corn Oil
- 2 cans pink or red beans (15 oz each), drained and rinsed
- 1/2 cup Dominican sofrito
- 2 garlic cloves, minced
- 1/2 cup tomato sauce
- 1 teaspoon Dominican oregano
- 1 teaspoon sazón
- 1/2 teaspoon adobo or salt to taste
- 1/4 cup fresh cilantro, chopped
- 1 cup water
- 1/2 cup pumpkin, diced (optional, for a traditional creamy texture)
Instructions
- Heat Mazola® Corn Oil in a pot over medium heat.
- Add sofrito and garlic, cooking for 2-3 minutes until fragrant.
- Add tomato sauce, oregano, sazón, and adobo. Cook for another minute.
- Add beans, pumpkin (traditionally blended before adding), and water or broth. Stir well.
- Simmer over medium-low heat for 15-20 minutes until the flavors combine, and the broth thickens.
- Stir in fresh cilantro at the end and adjust seasoning to taste.
- Serve with white rice, avocado, or your favorite side.
