Stewed Beans

Ingredients

  • 2 tablespoons Mazola® Corn Oil
  • 2 cans pink or red beans (15 oz each), drained and rinsed
  • 1/2 cup Dominican sofrito
  • 2 garlic cloves, minced
  • 1/2 cup tomato sauce
  • 1 teaspoon Dominican oregano
  • 1 teaspoon sazón
  • 1/2 teaspoon adobo or salt to taste
  • 1/4 cup fresh cilantro, chopped
  • 1 cup water
  • 1/2 cup pumpkin, diced (optional, for a traditional creamy texture)

Instructions

  1. Heat Mazola® Corn Oil in a pot over medium heat.
  2. Add sofrito and garlic, cooking for 2-3 minutes until fragrant.
  3. Add tomato sauce, oregano, sazón, and adobo. Cook for another minute.
  4. Add beans, pumpkin (traditionally blended before adding), and water or broth. Stir well.
  5. Simmer over medium-low heat for 15-20 minutes until the flavors combine, and the broth thickens.
  6. Stir in fresh cilantro at the end and adjust seasoning to taste.
  7. Serve with white rice, avocado, or your favorite side.
