Step 1) To steam tamales, place 2 to 3 inches of water in a large pot fitted with a vegetable basket, strainer or bamboo steamer. Bring water to a low boil and insert tamales in an upright position making sure they are not touching the water. Pieces of foil may be used to space them evenly and hold them upright. Cover with a tight fitting lid. Steam the tamales for 45 to 60 minutes over lightly boiling water, adding more water as needed. The tamales are done when they are firm to the touch. Carefully remove from the steamer and let stand for 5 minutes prior to serving.
