Ingredients
½ tablespoon of Mazola® Corn Oil
1 cup of dried garbanzo beans
4 cups of water
1 onion, chopped (divided)
1 tomato, chopped
1 jalapeño, chopped
2 small calabacitas, diced
2 carrots, diced
1 tablespoon of chicken bouillon
1 pre-cooked chicken breast, shredded
1 tablespoon of oregano
Avocado, cubed
Instructions
Soak garbanzos in water overnight (or soak in hot water for 1 hour) until they are soft enough to peel.
Peel garbanzos then bring them to a boil, cooking for 35 minutes or until tender, while prepping veggies.
In a hot pan, add Mazola® Corn Oil and sauté veggies until soft, about 10 minutes.
Once ready, add veggies to the pot with garbanzo beans along with shredded chicken and chicken bouillon. After this, add oregano for extra flavor.
Continue to cook on medium heat until it boils for an extra 20 minutes, then serve.
Top off with avocado and enjoy!
