Ingredients

4 bone-in center-cut pork loin chops
1/2-inch thick

Jamaican jerk seasoning
1 ripe mango
peeled
Instructions
Step 1) Whisk together the jam, mustard, orange juice, 2 tablespoons of oil, soy sauce, ginger and garlic in a small bowl.
Step 2) Sprinkle pork with the jerk seasoning. Heat the remaining 2 tablespoons of oil in a large non-stick skillet over medium-high heat.
Step 3) Add the chops and cook until browned and cooked through, about 5 minutes per side; transfer to a platter.
Step 4) Add the mango mixture and mango slices to the skillet and bring to a boil.
Step 5) Reduce heat and simmer, uncovered, until the sauce thickens slightly, about 3 minutes.
Step 6) Spoon the sauce over the chops.
