Juicy, smokey, and packed with Island Flavor, this chicken al la Ajilimojili is marinated in a blend of garlic, sweet peppers, vinegar, Mazola® Corn Oil, and then grilled to perfection.
For the marinade, blend 1 cup Mazola® Corn Oil, 4 sweet peppers, juice from limes, a 1/2 cup of white vinegar, 10 garlic cloves, 2 tsp of salt, and pepper until smooth. Pour over the chicken and marinate for at least 4 hours, preferably overnight.
Preheat the grill to 450°F. Place the chicken on the grill and cook for about 7–8 minutes per each side, or until fully cooked and nicely charred. As it cooks, brush on additional marinade to keep the chicken juicy and packed with flavor.
